The MayDay 2017 pickled egg batch

I just completed the bottling of a large batch of eggs - 1 gallon + 4 quarts.  These will be served on Memorial Day 2017.  Each quart held approximately 13 large eggs - the gallon jar approximately 60. In addition to a heated 50/50 mixture of white distilled vinegar and filtered water (and of course the eggs), each quart contained approximately:

- 3 tbsp white granulated sugar

- 2 tbsp salt

- 2 tbsp dried chopped onion

- 1 tbsp crushed red pepper

- 1 tbsp dried minced garlic
